On Wednesday, April 20, Gaucho will launch a Sustainable Supper Club series at its newly reopened Charlotte Street hotspot, ahead of World Earth Day on April 22.
This is the first restaurant in the Gaucho Group to exclusively serve carbon neutral beef, as part of Gaucho’s vision of running sustainable restaurants.
Supper Clubs will run from the penultimate Wednesday of each month. Guests can enjoy a four-course feast for £50 per person with a zero waste drinks agreement at an additional cost £20 per person, each element embodying Gaucho’s principles of sustainability.
Each month a different bespoke menu will feature underutilized cuts of meat, local and seasonal herbs and vegetables and a range of eco-friendly beverage brands.
Each monthly Supper Club will also introduce a new sustainable element, ranging from uniforms worn by staff to dishes and table linens used at night. Live music will accompany each Supper Club, showcasing the talent of local musicians.
On April 20, the very first Supper Club will kick off with Zero waste sourdough with sobrasada butter will be served with a glass ofRibs & Seely Brut, an English sparkling wine produced locally in Hampshire.
To follow, Fazoletti of grilled beef heart with artichoke purée, spring herbs and brown butterwill be accompanied by a cocktail of Bourbon Bulleit hazelnut butter, maple and Angostura spices .
Diners will then be treated to a carbon neutral beef main course with the Entrana, fried anna apple and English garden chimichuriaccompanied by a cocktail includingSpirits Co. Vermouth and Campari Throw. The enduring party will end withGoat’s milk cheesecake, London honey, spiced berries and nut crumbsaccompanied by a mixture ofCinnamon Pampero Blanco, Drambuie, Discarded Spirits Co. Vermouth and honey foam.
